A Little Chapel in a Lavender Field – Emma & Bryn’s Daylesford Wedding at Sault

Emma and Bryn’s Sault wedding in Daylesford was built around family-dinner warmth, candid moments, thoughtful care and a very happy dog.

Emma & Bryn in the defining frame of their wedding at Sault

Before Emma walked into the chapel, her dad—feeling a little overwhelmed by the prospect of the ceremony—took the couple’s dog, Penny, for a walk and got lost in Daylesford for 45 minutes. A kind local eventually pointed him back in the right direction. It was the sort of small family story that says plenty about a wedding: nerves were real, everyone cared deeply, and there was enough humour in the room to make space for it all.

Emma and Bryn had a long history with Daylesford before they began planning their wedding. Their first weekend away together was there, and they kept returning for day trips over the years. One dinner at Sault made the decision easy. They weren’t looking to create a formal occasion so much as the feeling of a large, warm family meal—with their favourite people given permission to settle in and enjoy themselves.

The nerves, the jokes and the house investigation

The morning had that particular pre-wedding energy where time seems to move too quickly, even when nothing is technically wrong. Emma remembers the whole day as a blur of adrenaline, though she also recognises now that the vendors were quietly keeping everything on track.

Sharon, their celebrant, was part of that calm. She and Emma became briefly—and enthusiastically—absorbed in trying to work out where the décor in the house had come from, investigating room after room while the rest of the morning continued around them.

John arrived with Sharon and folded into the group rather than turning the preparations into a production. Emma remembers him chatting, joking and keeping things candid, while also good-naturedly hurrying along the hair and makeup schedule when it began to run late. For someone who dislikes posing and admits she can’t manage a soft smile on command, that relaxed approach mattered. It allowed the morning to stay human rather than overly managed.

A father’s kiss at the chapel doors

The clearest memory Emma holds from the day came in the pause before the chapel doors opened.

Her sister and niece had gone ahead. The music had started. Then her dad leaned down and kissed her on the head. A moment later, the doors opened and Emma saw the flowers, the people she loved, and Bryn waiting at the front looking entirely happy. She remembers being flooded by it.

That memory sits at the centre of the day because it wasn’t about a grand gesture. It was the emotional weight of everything arriving at once: the nerves, the planning, the family history, and the sudden realisation that the person you are about to marry is there, ready and smiling.

The small things people remember

Sault’s team, led by Jody, had a knack for noticing what was needed before anyone had to ask. When Emma arrived with her sister and dad, cold drinks were ready so they could regroup before the ceremony. Later, when the cake was knocked about slightly, the team quietly covered the issue with fresh garden flowers. No fuss, no announcement, just a problem solved.

Afterwards, Jody hand-wrapped the flowers into bunches for guests to take home. It was a simple act, but one that suited the spirit Emma and Bryn had wanted all along: generous, comfortable and personal.

Emma’s champagne was also kept topped up by an attentive waitress throughout the evening, largely because she never stayed still long enough to finish a glass. The detail makes sense for a couple who wanted to enjoy the party they had spent so much time planning.

Making room for the party

Emma and Bryn made one particularly smart decision before the wedding: they caught up one-on-one with guests flying in from overseas and interstate a few days beforehand. It meant the wedding itself did not become a race to have meaningful conversations with everyone. Their regular friends were happily in one another’s company, while Emma and Bryn had space to eat when they could, dance with The Knots, and be married for the first time.

One of Emma’s favourite photographs came after guests had gone inside for drinks and canapés. She, Bryn and Penny were simply leaving the chapel when John called them to pause. It was freezing, he said something that made them laugh, and the moment remained unforced. For Emma, it holds the feeling of beginning a new life together: relaxed, close, and without the need to perform it.

That was the lasting character of Emma and Bryn’s Sault wedding in Daylesford. Beneath the nerves and the carefully considered details was a couple determined to enjoy their own party—and a group of people who made that remarkably easy.
